This past week-end I got my first produce basket from Bountiful Baskets. I’ve been wanting to try a produce co-op for a while, but I’m always intimidated by the idea of paying for a whole season at once. What happens if I’m gallivanting through Europe one week? Then my produce just goes to waste!! I first heard about this group from my friend Trisha, and it seemed perfect. You sign up each week, so if you’ve scheduled a play date with the Affleck kids on Saturday morning, then you don’t have to worry about your $15 going to waste! The only downside I can find is that you don’t know what you’re getting ahead of time, but that just forces some creativity!
In this my inaugural basket, there was a watermelon, tomatoes, yellow squash, star fruit, apples, bananas, lettuce, celery, cucumber, and a mango. It was a ton of food. So far we’ve been making smoothies plus these super yummy cookies. I wanted to use the squash to make something sweet, and I didn’t want it to seem in any way healthy. These cookies are super moist, and you definitely would have no idea about the squash. They’re like delicious little brownie bites. I’m also going to use the rest of the squash to make this. It doesn’t really seem that healthy either!
I don’t know anyone over at Bountiful baskets, but they seem like a good group to me. Obviously this is just my first week, but if it keeps up like this I’ll be very happy. They’re all over the place, so you should see if there’s one in your area.
Oh, I don’t know if you’ll notice, but I finally figured out the degrees symbol. What has taken me so long?! There’s a whole symbol map, plus you can just use Alt 248. My husband is a genius!!
Chocolate Chocolate Chip Cookies (with squash) (adapted from all recipes)
- 1/2 c. butter
- 1/2 c. white sugar
- 1/2 c. brown sugar
- 1 egg
- 1 tsp. vanilla
- 2 1/4 c. flour
- 1/3 c. cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 c. grated yellow squash
- 1 c. chocolate chips
- Cream together butter and sugars.
- Beat in egg and vanilla.
- Combine dry ingredients in a separate bowl.
- Combine dry ingredients with butter mixture.
- Add squash and mix.
- Add chocolate chips.
- Use your fancy cookie scoop and to form cookies.
- Bake on a lined cookie sheet at 350°
