FFwD: Gorgonzola Apple Quiche

I feel like this week’s recipe might almost be healthy. It does have some cream, but I mostly filled the pie shells with apples, onions and cheese! The first time I had a quiche with apples was over Christmas at my sister-in-law’s house. I was pleasantly surprised by the whole thing. If I hadn’t tried Ingrid’s quiche I might not have been too keen to try this week’s recipe, but Ingrid taught me that I can enjoy new things! The gorgonzola wasn’t at all overpowering. The whole thing made for a delicious lunch. I actually made this as individual tarts, and I didn’t bother making my own pie crust. The grocery store had pre-made pie dough on sale for a quarter. How can I refuse that?! The other great thing about this recipe is that it can be made ahead. I made it the night before, and then just re-heated it in the toaster oven when it was time to eat.

This is a recipe that I definitely recommend. My only regret is that I rushed taking the pictures, because I think that they looked a lot better in real life!

p.s. Am I the only one conflicted about what to watch on Sunday night? There are Super Bowl commercials for the “Big Game,” but then there’s also Downton Abbey. What to do?!

    I love quiche…especially with apples! I definitely would love to get this recipe from you. The quiche I made was with swiss cheese, so I wonder how different it will be with gorgonzola and the different ingredients… YUM!

  2. I like your individual sizes. I also was surprised by how well these ingredients go together…new ideas for me, and we liked this recipe. I need to make quiche more often and this week’s assignment is a good reminder of making a “healthy” food that is a change of pace for our family.

  4. Dough for 25 cents??? You would have been crazy to make your own with that on hand. The mini quiche look great.
    I know better than to suggest watching anything else Sunday. Resistance is futile ;-)

Well, we’re a football household so I’ll make some wings, watch a bit of the first half with the D the fanatic and then retire to the bedroom to watch just about anything else since I’m still in mourning for the Packers.

  7. I love your mini quiche. I had enough extra pastry crust to make one extra mini, and just loved the single size! I live in New England and the Pats are playing, but we’ll be watching Downton Abbey at my house. While I hope the Pats win, I’m not a football fan.

  8. DVR Downton Abbey, watch the game? I liked the quiche, but mine didn’t seem much like health food. The crust recipe I chose was really buttery! I also made individual quiches and loved playing around with the different combinations.
