Christina’s Meals: Week 9

It’s Spring Break here this week and we’re stuck at home. Sick kids and lots of rain today. Delia was actually grateful to be off school this week, so she didn’t have to miss anytime with being sick. I’m glad that she’s enjoying school so much this year! And we didn’t have too much in the way of fun plans for the week, so hopefully we’ll get through this quickly and end the week on a high note.

If you’re looking for menu ideas for yourself, I think the Taco pie was my family’s favorite from last week. And it’s obviously super easy if you’ve prepped for tacos the night before. I cooked some chuck roast in the crock pot on low for 10 hours with some garlic and salt and then shredded it to serve with our tacos. We went to a friend’s house for dinner a couple of months ago and that’s how she cooked her beef and I thought it was so delicious. I don’t think mine was quite as good as hers, but there were definitely no complaints at my house!

Sunday: Penne with carmelized onions and red lentils

Monday: Broccoli and Veggie Soup with Cheese

Tuesday: Chicken Pot Pie

Wednesday: Leftovers

Thursday: Tacos with guacamole and blender salsa (this link goes to The Pioneer Woman, but I originally got this recipe from my cousin Kathryn)

Friday: Taco Beef Pie – I didn’t have any Bisquick, so I tried this recipe for making my own (it worked great).

Saturday: Pizza
