BLT Salad

 

I love the holidays, and I love all of the treats and food, but every so often I feel like I need to detox from the sugar a bit. If this wasn’t the season for mandarin oranges, I don’t know that I’d get any fruit in my system at all (unless mulled cider counts!). So, even though this is the month of a million cookies, this is also the month that I like to make some lighter meals.

A good salad helps me feel less guilty about all the cocoa and cookies! I came up with this recipe after seeing a recipe for BLT Pasta on Pinterest. A BLT salad seems like common sense to me. It’s not super low fat because of the bacon and the bacon grease soaked croutons, but it feels healthy!

BLT Salad

Ingredients:

  • 3 c. chopped romaine
  • 3 strips bacon
  • 4 slices of baguette
  • 1 c. grape tomatoes

Instructions:

  1. Rinse and dry lettuce and place in a large bowl.
  2. Cook bacon on the stove top until you get the texture that you like. It’s important to do this on the stove for the next step.
  3. Cut the baguette slices into 1″ cubes and fry in the bacon grease over medium heat. This gives the croutons an amazing flavor!
  4. Chop up the bacon and toss in the salad with the croutons and tomatoes.
  5. I like to serve this while the croutons and bacon are still warm. I also serve it with a poppy seed dressing, but feel free to use whatever dressing you like best.
