The weather has started to get colder up here in the last frontier. We’re in the mood for a hearty dinner pretty much every night. If your house is like mine though, the witching hour between after school and dinner time can get a little crazy. I have five kids in school this year, and between homework, piano and school sports, I don’t have a lot of time for meals that take a ton of prep and time. That’s one of the reasons I was so intrigued to try Progresso’s new Chili.
Chili Baked Potatoes were pretty common in my house growing up, but it’s been a while since I’ve made them for my kids, so this came at the perfect time. Progresso recently came out with a new line of Stews and Chilis that can be prepared in about 5 minutes. This is the perfect solution for busy weeknights. We tried the Smokehouse Pork and Beef Chili with Beans, and I was super impressed because it was tasty, but it was also filling for my kids. A lot of times, ready made chili feels like it’s lacking something, but this was hearty, with big chunks of meat.
Little did I know when I began planning this meal that my fridge was going to die. I really struggled last week to make healthy meals for my kids without the benefit of refrigeration (I wanted to keep all our food on the back porch because it’s cold enough, but my husband wasn’t in the mood to attract all the bears and moose to our house!). I was so glad I had the Progresso Chili in the pantry, it totally saved the day!
The great thing about this meal is that you can prep it early in the day, and then have it ready to go with only 5 minutes in the microwave for the chili. I “baked” the potatoes in the slow cooker, and I decided on my toppings. I had everything ready to serve in the time it took my kids to clear their homework off the table and wash their hands. One of the reasons this meal is so family friendly is that the kids have a little control over their meal. They get to choose what toppings to put on their potatoes, and when kids feel like they have control over their food they usually do a better job eating their food.
Here is all you need for a quick and delicious weeknight meal:
- Progresso Smokehouse Pork and Beef Chili with Beans (there’s also a vegetarian chili, but I like meat!)
- 1 potato per person
- grated cheese
- sour cream
- chopped green onions
- bacon pieces
- diced tomatoes
To “bake” the potatoes, pierce each potato a few times with a fork and then wrap in aluminum foil. Place potatoes in a slow cooker, and cook on high for four hours.
Unwrap the potatoes and slice an X into each of them. Top with chili, and then add the fixings of your choice!
