Our house is pretty much donut crazy. One of the things our kids miss the most about San Antonio was our proximity to Krispy Kreme. Word on the street is that they’re building a Krispy Kreme in Anchorage, but we’re a little skeptical. There is one donut shop in our neck of the woods, but it’s about 10 miles away, and it is closed on Mondays, and during the evening, but if you’re in the Kenai area you should definitely go get yourself an Apple Fritter from The Moose is Loose (this is also where to buy any moose themed gift items). That means our only late night donut runs are to Safeway or Fred Meyer!

So, if you are like us and not really close to a donut shop, then you need to get creative and make them yourself. I’m going to be completely honest here, I have not yet mastered deep fried donuts, so today we’re going baked, which is a little easier for the kids to help with, and a lot less messy.

If you’re going to bake your own donuts I am a big fan of the Wilton Mini Donut Pan. It seems way less gluttonous to eat three donuts when they’re bite sized! I would suggest buying two of these pans, otherwise you’re going back and forth to the oven a lot. I also love Disposable  decorating Bags. They make it really easy to fill the pan, and they’re mess free!

We went with lemon poppyseed because we’re working on recipes for National Lemonade Stand Day next Saturday. My kids are pretty excited for their first adventure in the world of entrepreneurship. My big piece of advice was to make everything a dollar so the math is easy!

Lemon Poppy Seed Mini Donuts

Ingredients:

  • 1 3/4 c. flour
  • 3/4 c. sugar
  • 2 tsp. baking powder
  • pinch of salt
  • 1 egg, beaten
  • 1 c. milk
  • 1/4 c. vegetable oil
  • 1 tsp almond extract
  • 1 Tbsp poppy seeds
  • 3 tsp shredded lemon peel
  • 2 Tbsp lemon juice
  • 1 Tbsp sugar
  • 2 Tbsp lemon juice
  • Belgian Pearl Sugar

Instructions:

  1. Pre-heat oven to 350º and grease pan.
  2. Sift together flour, sugar, baking powder and salt.
  3. In a separate bowl combine egg, milk, oil, almond extract and 2Tbsp. lemon juice. Combine wet and dry ingredients and mix.
  4. Add lemon peel and poppy seeds; mix.
  5. Place batter in disposable decorating bag, and fill each donut cavity 3/4 full.
  6. Bake for 5-7 minutes.
  7. While donuts are baking, prepare glaze.
  8. Mix 1 Tbsp sugar with 2 Tbsp lemon juice. Using a silicone brush, apply glaze to warm donuts and top with a sprinkling of pearl sugar.

p.s. This has nothing to do with donuts, but we got a puppy and we’re pretty smitten with him so far!
