Summer is the time for light and easy meals. When the weather is warm you don’t want to feel weighted down with super heavy foods. This caprese salad makes a perfect light lunch, but you could also pair it with some grilled chicken for a complete dinner.
I’ve changed the recipe up from a traditional caprese by adding chopped strawberries and some strawberry balsamic vinegar. The berry flavor is a great addition to the cheese and tomato. The other thing I love with this is pre-sliced mozzarella. It seems a little ridiculous to pay for sliced mozzarella, but one less step is one less step! I also love that all the slices are uniform.
I didn’t put exact measurements in the recipe, because you really can’t mess this up. Add more if you’re feeding a crowd or just use a single tomato if you’re making a single serving. This is a little it of Summer in Italy, even if you’re living in Alaska!
Summer Strawberry Caprese
- Tomatoes, sliced
- Mozzarella, sliced
- Strawberries, diced
- Strawberry balsamic vinegar
- Olive oil
- Fresh basil
- Salt and pepper
- Lay out slices of tomatoes and mozzarella in an alternating pattern.
- Sprinkle with the strawberries and basil.
- Drizzle with the olive oil and vinegar.
- Top with salt and pepper.
