School went back in for us this week, and while I’m excited to get my house back during the day, it also means that I’m packing lunches for five kids (six if you include the lunch for my toddler). We pretty much have an assembly line system going, and it works extremely well, but we’re always looking for ways to spice things up. My kids will start to revolt if they have the same thing too many days in a row!
You might think I’m a little crazy for making so many lunches every day, but the truth is, my kids need more food than the cafeteria offers to keep them full until they get home at 4:00pm. One of the biggest helps is that my kids are great at preparing lunches. We have a great system with all our supplies in the pantry, and the kids know that they get a treat, a fruit, and main and either some cheese or yogurt.
Today’s recipe is for a tuna curry salad. You might think that your kids won’t eat this, but my experience has been that if I let my kids help me make a new lunch they’re more likely to enjoy it. The curry flavor here isn’t overpowering, and there are so many different types of curry that you can make things spicy if your kids love a little extra heat! I used yogurt instead of mayonnaise; it makes it both a little lighter and a little more authentic. I also put in some diced green apple and raisins. If your kids enjoy curry for dinner this lunch will be very familiar to them. I served it with sliced naan, but if your local market doesn’t carry naan then you can always serve it with crackers (but, if I can get naan in Kenai, then I’m willing to bet that you can get it too!). I put the salad in a 4 oz. jam jar. This gets a great seal for both before and after lunch (please tell me my kids aren’t the only ones who put all their trash back in their lunch boxes?!).

Curry Tuna Salad
- 1 can Bumble Bee® Solid White Albacore
- 2 tsp. curry powder
- 1/2 c. plain yogurt
- 1/4 c. diced green apple
- 1/8 c. raisins
- Combine all ingredients thoroughly and chill.
- Serve with Naan or crackers.
