Muffin Mondays: Orange Chocolate Muffins

It’s Monday morning, and nothing will help chase away the post weekend blues like a yummy breakfast treat!  Let’s be honest with each other, a muffin is nothing more than a breakfast cupcake … unless it’s a bran muffin, but no one wants to talk about bran here! So, if you’re going to make a muffin, you might as well add chocolate. I also added orange because then I can legitimately label it healthy-ish! I mean I added actual orange, not just orange extract. There will be no scurvy at my house!

I was lucky enough to win an Instagram contest from Lindt Chocolat that consisted of a year’s worth of chocolate! As contests go, I don’t think it gets much better than chocolate, and lots of it! Also, in case you’re wondering, people really do win those contests! Since winning I’ve been trying to find ways to use the chocolate that don’t include me hiding from my kids in my pantry!

Muffins are always a hit with my kids, so you can’t necessarily trust their opinions on these, but I thought the flavors were wonderful together. Orange and chocolate always reminds me of the holidays, but sometimes it’s nice to enjoy the flavors when it’s not December! Muffins take hardly any time to put together, and they make everyone happy. Who doesn’t like to add a warm muffin to their morning routine?

Orange Chocolate Muffins

Ingredients:

  • 1 3/4 c. flour
  • 1/2 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 3/4 c. milk
  • 1/4 c. oil
  • 1/3 c. orange yogurt
  • 1 c. chocolate chunks (I used a Lindt Orange almond Excellence Bar)
  • zest from one orange
  • 1/4 c. orange juice

Instructions

  1. Combine flour, sugar, baking powder and salt in a mixing bowl. Create a well in the ingredients.
  2. In a separate bowl combine egg, milk, oil, juice, zest and yogurt.
  3. Pour liquid ingredients into the dry mixture, and stir until just combined.
  4. Stir the chocolate chunks into the batter.
  5. Using a large scoop, fill greased muffin tins about halfway.
  6. Bake at 400° for 18 minutes.
