Today’s Tuesdays with Dorie recipe is Chocolate-Cornflake Haystacks, from Dorie’s Cookies . When I first read what the recipe was, I thought I would be making no bake cookies, but Dorie switched it up and these haystacks are baked! I’m not going to lie, these were not my favorite cookies so far. I loved the idea of the cornflakes and the coconut and the chocolate, but the raisins took it one step too far! I’m pretty sure the only cookie that tolerates a raisin is an oatmeal cookie, and even then it’s on shaky ground! Because we have nut allergies at my house I replaced the nuts with sunflower seeds. I don’t know if it would have been better to leave those out entirely, but the seeds didn’t really add anything to the flavor or the texture. I also actually had agave on hand, so that part of the recipe went according to plan! I did use dark chocolate instead of milk, but I don’t know if milk chocolate would have made these delicious for me! As a plus, I did get rid of the cornflakes that my kids refused to eat for breakfast!
I actually sent these to school as part of teacher appreciation week along with the vanilla polka dots (which were amazing!), and I’m hoping that there were some raisin fans among the teachers at the elementary school!
